This beer was made in collaboration with the University of Guelph Horticulture Club. This club was formed in 1908 and works with students, faculty and the community to provide meaningful education for people with an interest in plants! This very agriculturally-based beer-style (Saison) is the perfect base for the use of herbs and plants grown by the Guelph Center for Urban Organic Farming.
This brew pours a hazy golden with a frothy white head. The aroma is very herbal, with notes of mustard greens, sage, hay, lemon balm, thyme and old garden shed! As the beer warms, clove and doughy malt notes come through. On the palate, the herbaceous notes come through and creates a very pleasing complexity against the doughy malt profile. Some spiciness from the rye and the nasturtiums creates excitement! The beer finishes very dry with lingering earthiness from the hops and that same complex herbaceous presence throughout.
